NXT Facilities Mushroom Chamber


Mushrooms have so much creative potential as an ingredient and are symbolic of our pursuit to be more in harmony with natures bounty.

Our mushroom fruiting chamber is down in the basement facility (where else?) and is as much a living art installation as it is a food production centre. We manage the spore and inoculation process in the mushroom lab and when we are ready, mycelium blocks grow mushrooms in the 8 meter long glass fruiting chamber.

We grow some lesser known varieties from Indonesia as well as some of our favourite varieties to cook with. This initiative gives us an abundance of mushrooms to play with that we've never had in the kitchens before.

Current and planned mushrooms we are developing include Pink Oyster, Golden Oyster, Lions Mane, Reishi, Pioppino, Milky Mushroom, Golden Enoki, Chestnut, Blue Oyster, Shimeji, King Oyster, Red Wine Cap, Gold Wine Cap, Cordyceps, Hen Of The Woods.
