All the design work for NXT and the art direction on the project vision is through our partnership with Agency X. 

Based in Bali but working on big projects with International and domestic clients, they are a cross discipline style agency that develop ideas which live across different experiences and mediums. Primarily working in Food and Beverage, their often disruptive approach looks at opportunities the current landscape isn't serving and find exciting dynamics in being different from the rest.

Black Hand Gang Studio was established in 2020 as Indonesia's first pioneering printmaking facility. The company has grown dynamically, diversifying into a wider range of artistic mediums and introducing innovative new services for clients.

At the heart of the company lies an extensive printmaking studio, recognised as a pioneer of the Indonesian print movement. The studio facilitates access to resources and education for emerging and established artists, as well as the wider printmaking community. The company has held major exhibitions in Bali and Jakarta in collaboration with institutions such as the Macan Museum and the Ruci Gallery.

Their Ubud-based studio hosts ongoing series of workshops for the wider public to participate in learning about printmaking, craft activities and producing their own artworks to take home.

Their commercial services offer clients the benefits of 'experience through art'. This is achieved through consulting and curation, artwork production, artist collaborations, interior design, and sales and rentals from their collection.

Focusing on the power of art to create experiences, the team works across different media and project scales, collaborating with a variety of partners on different concepts. Their extensive experience also includes collaborating with local Balinese and Javanese artisans to produce paintings, textiles, wood carvings and other traditional crafts with a contemporary spin.
Their community-led offshoot, the Asia Pacific Print Club (APPC), has members from over ten countries and regularly organises group exhibitions across Asia.

The Foundation Sigar Mangsi actively supports social projects, such as art therapy programmes in collaboration with schools, social organisations, and local orphanages.

In seeking our architect partner for NXT part of the brief was innovation in how the space is an integral part of the restaurant project experience. BPA was awarded the work and have partnered with us to create a refreshing and creative modular space that reflects our aspiration to be closer to nature and regenerate more inspirational ideas for others to follow. 

Budi Pradono and his team are based in Jakarta and their portfolio features high profile government projects and private dwellings, and they have several initiatives such as Bintaro Design Week and other design competitions for architecture to solve environmental and social challenges.

Our friends at ClimeMates run a large-scale composting facility here in Bali, and they’re the ones we trust with our organic waste. They take care of the bones, shells and other compostable materials that don’t go to our Black Soldier Fly larvae or internal systems. They help us manage waste not only at NXT, but across other Locavore Group outlets as well. It's a solid behind-the-scenes collaboration that keeps things circular and makes sure ‘valuable’ waste doesn’t end up in landfill.

EcoBali offers a full-circle approach to responsible waste management, from separation at the source to recycling, composting, consulting and educating communities. They handle the non-organic waste at NXT through two key streams: recyclables and tradables. Certain plastics and other materials that still hold values are collected two to three times a week and sent for repurposing.

Gaya group has two distinct halves. Gaya Ceramic Design Studio is run by husband-and-wife team Marcello and Michela, who create bespoke ceramic collections with incredible craftsmanship. 

We have a long running relationship with the people at Gaya and set them a new challenge with our brief for NXT to explore themes around nature and the space we have created. We have worked with them on many of the pieces that feature as part of our dining experience at NXT, and some are for sale in the Concept shop. 

We are forever simply mesmerised when they present their works by the creativity of ceramic finishes, designs and overall quality. It is literally eating from works of art.

The other half of Gaya is their Art Center run by the wonderfully talented Hilary Kane. 

Established as a dedicated studio to develop the art of ceramic and explore traditional techniques with their incredible facilities, featuring several kilns and tools not found anywhere else in Indonesia. The centre runs workshops, offers an artist residency programme, and houses a space dedicated to pushing the limits in ceramic creativity. 

Not typically working outside of artistic pursuits, we were lucky to inspire Hilary to create some unique pieces that will feature as part of our dining experience at NXT. Truly one-of-a-kind craftsmanship.

Junglo are a team of certified forest makers who have helped us rewild areas of our NXT landscape. They use the Miyawaki Method created by Japanese botanist Dr. Akira Miyawaki, which focuses on understanding the original ecosystem that existed in an area and trying to recover it. 

Working with Junglo we have planted forest around our Eco Cottages with an approach that centres around biodiversity, fungi-rich soils and high plant density to help return the native nature around NXT and create a better habitat.

Our favourite coffee gurus in Indonesia are the team at Hungry Bird Coffee. Their Canggu basecamp is a house conversion where they have their own lab and roastery to experiment with specialty local coffee beans from Indonesia and abroad. 

Headed by founder Edo who is a self confessed coffee geek, they have an interest in many farms and work with Arca, a coffee farmer from Kintamani, on special lots and processing. Not just great coffee roasters, but their brew craft and espresso know-how is up there with the best, and they pretty much win all the national competitions and have been on winners podiums in International coffee competitions and forums. 

They help work with our beverage team on coffee programmes, innovations and service.

Kevala Ceramics are long time collaborators with the Locavore Group on many of our projects and a trusted partner for creative servingware commissions. 

We were excited to brief owner Wendy Thomas and her team on NXT and the theme of nature and sustainability. Working together with British designer Sarah Howard we commissioned a production of custom stoneware ceramics made by hand, with a particular focus on using recycled and upcycled waste. 

Glazes that use crushed glass from Sungai Watch river trash collections in Bali, old plaster moulds used to make new collection pieces, and ceramics mixed with natural stone waste from construction sites are all methods that feature in the pieces they have made for our diningware at NXT for use in the Canteen restaurant.

Led by Aaron, Kulture Mushrooms began as a home-grown mushroom cultivation project back in 2010, named Urban Kulture. What started as an independent project then evolved into a full-scale operation housed within Locavore NXT.

Inside our Root System, you’ll find their glass Mushroom Chamber, dedicated to cooler-growing varieties, and a separate fruiting room for heat-loving species. Completed with their lab for inoculation and colonisation, this setup allows for the in-house cultivation of a wide range of rare and high-grade mushrooms in Bali: Lion’s Mane, Reishi, Chestnut, multiple types of Oyster, Pioppino and more. Many of these end up in our dishes, becoming part of our creative process, some of them are turned into products that you can find in our Design Store and online. Kulture Mushrooms also runs the occasional workshop, for those curious enough to start their own fungi journey at home.

Working with Agency X, we curated several of our favourite local contemporary and traditional artists from Bali to produce works for NXT. Nyoman Arisana's 3 metre wide circular painting titled 'Circle Of Life' depicts the habitat of NXT in a traditional style reminiscent of ancient Balinese paintings. Wayan Upadana's study of classical Dutch Delftware flips the ceramics on their head when exploded into a chandelier. Local wood carving experts Komang and Wayan expertly carved out of proportion Jackfruits stack in the lobby bar, hidden wooden columns reveal the calamity of village arak consumption, and the iconic Balinese door holds many secrets…

Wayan Upadana's sculptural artistry is no stranger to innovation, in our study of Delftware ceramics we decided to work with resin to create lifelike objects to allow us to produce the two sets of the work. His studio is in Gianyar, Bali, and his works have been shown internationally at many high-profile solo and group exhibitions.

Our friends Komang and Wayan from our local wood carving village community, work with their various teams and specialists in carving, door production and temple cravings. Carving the details on these large-scale installations took over a year to produce.

Mahteh Ceramic is a ceramic studio located in the idyllic Lodtunduh neighbourhood, just near our restaurant. Founded by Séline and Marco, their work features earthborn, sculptural pieces which reflect their unique backgrounds in the architecture and graphic design fields.

We’ve collaborated closely with them mainly to explore natural materials from our surroundings: clays from specific Balinese terroirs and even cooking ashes from our Main Kitchen. Some of our dishes are also served in a gaiwan-inspired bowl and claypot.

Sub Zero Wolf are leaders in meticulously crafted and expertly engineered kitchen appliances. We have worked with them for several years on the kitchens for our Locavore LAB. For LabX – our new research and development kitchen at NXT – we were supported by Sub Zero Wolf to develop the open-kitchen facility and take our innovation to the next level.

Wedoo builds machines that turn waste into something useful, which makes them a natural partner for us. We use their shredder in our Circular Waste Centre to break down organic waste before it goes into compost or becomes food for our lovely little Black Soldier Fly larvae friends.

Foraging Experience

This season, we go back to where it all begins. Wilder ingredients, we work less with middlemen, pull on our boots and forage further, use farms to grow the harvests we can’t yet find, let go of ingredients that have become too familiar, lean harder into our rooftop food forest, neighbouring rice paddies and the jungles around us.

Featuring ingredients you think you know, alongside others that we find wilder, delightfully unusual and unique. From sacha inchi and coconut flower, to three kinds of sapodillas, slipper lobster and Surinam cherry, all found close to home.

You will also have the option to go foraging with our team, either around NXT or deeper into the jungle, before your dining experience.

The Source

The third edition of our annual mega-collaborative adventure is back. Every year, we pitch our tents and invite creative chefs from around the world to join our annual basecamp event, Into The Wild.

This year is wilder than ever with our friends travelling from Japan, South Korea, India, Singapore, Malaysia, Philippines, Thailand, Taiwan, as well as Indonesia. Here are the participants:

Over several days, a troop of creative chefs go ‘Into the Wild’ and spend time trekking through jungles, foraging, cooking their own lunch in the jungle, sharing stories, ideas and knowledge over drinks at the campfire.

The weekend culminates in our infamous mystery-ingredient-challenge dinner service with mystery ingredients for the chef teams to cook with and serve to guests in less than 8 hours.

10 chefs from Asia's leading creative restaurants are gathering in Bali to explore local ingredients and its unlimited possibilities. For four days, they will go on an adventure to do foraging and sharing cooking techniques and inspirations. On the final day, at Locavore NXT they will come up with an unpredictable, one-night-only dinner. A mysterious Black Box will be unveiled by the chefs, filled with local ingredients – some exciting, some a bit unexpected. By lottery, these experienced chefs will pair up into duos and each duo will create their own snack and main course, using the ingredients from the box.

It’s a night of creative culinary surprises – even for the chefs.

The group of tastemakers will spend several days together exploring local ingredients, sharing culinary techniques, stepping into the wild for foraging trips and connecting over their common passion for doing things differently.

But, on the final day, they're going head to head in a clash of competitive innovation with a 'mystery box of ingredients' challenge.

We're opening on Sunday 12 May for a one-off dinner featuring off-the-cuff creations from the chefs, who will have only the morning to develop and prepare new dishes for a very unique tasting menu experience.

Guests who book The Full NXT Experience are provided with dinner at Locavore NXT followed by an overnight stay at The Wood Rooms, a private tour of the NXT project (including meeting the chefs) and an off-menu breakfast in our Canteen restaurant.

The Wood Rooms are located next to the restaurant and are integrated into the project's vision for sustainability, enclosed in a small wild, wooded area we created with a reforestry foundation.
