BEVERAGE LAB
Our seasonal tasting menus are made to pair perfectly with the house-made creations of our Beverage team. As a facility for research and development, the Beverage Lab is where these pairings come to life — alcoholic, non-alcoholic and other creative non-traditional drinks.
We explore local ingredients used in the menus and often repurpose the waste from the kitchen, and then see what we can develop for our beverage program. The small-batch lab uses a range of equipment that helps to experiment with taste, aroma and sensory experiences.
