MUSHROOM CHAMBER

Mushrooms have so much creative potential as an ingredient and are symbolic of our pursuit to be more in harmony with natures bounty.

Our mushroom fruiting chamber is down in the basement facility (where else?) and is as much a living art installation as it is a food production centre. We manage the spore and inoculation process in the mushroom lab and when we are ready, mycelium blocks grow mushrooms in the 8 meter long glass fruiting chamber.

We grow some lesser known varieties from Indonesia as well as some of our favourite varieties to cook with. This initiative gives us an abundance of mushrooms to play with that we've never had in the kitchens before.

Current and planned mushrooms we are developing include Pink Oyster, Golden Oyster, Lions Mane, Reishi, Pioppino, Milky Mushroom, Golden Enoki, Chestnut, Blue Oyster, Shimeji, King Oyster, Red Wine Cap, Gold Wine Cap, Cordyceps, Hen Of The Woods.

‘B.I.O. Library’ 2023

Documenting the extensive knowledge and application of local ingredients required a platform that could help share, inspire and create a new community. The B.I.O. Library (Biodiversity Interactive Open-Source Library) is a world’s first 3D digital record of edible ingredients. Over time we intend to document many more varieties of ingredients we work with and host a platform online that allows others to contribute from all over the world.

For now, this installation allows a dynamic presentation of some of the edible biodiversity we have documented, and takes guests through the origin story of the food and drink as part of our tasting menu experience. Scroll, zoom, spin and fly through the 3D library of nature.

A remarkable experiment that still continues, Digital Nativ brings ideas to life through their maverick leaders ability to inspire, invent, create and adapt to solve problems and surpass expectations.

NXT’s ambitious scope and size – with layers upon layers of progressive activity – is almost a biological entity in itself. This results in a huge amount of data flying around directly and indirectly from the project's people, products, cultures, habitat, environment, social impact, and sustainable development. We take that data and help channel it into a single stream of information… like a ticker tape of data from inside the brain of NXT.
