They compliment our restaurant groups development with creativity in ideas, businesses, experiences and project management. All the design work for NXT and the art direction on the project vision is through our partnership with Agency X. 

Based in Bali but working on big projects with International and domestic clients, they are a cross discipline style agency that develop ideas which live across different experiences and mediums. Primarily working in Food and Beverage, their often disruptive approach looks at opportunities the current landscape isn't serving and find exciting dynamics in being different from the rest.

The creative art studio at Black Hand Gang were the first dedicated print making facility in Indonesia. 

Proudly representing a new movement in printmaking in Indonesia, BHG combine traditional techniques with contemporary art direction and innovation of the medium. Working with established artists from Indonesian and international names, they publish limited editions of prints for exhibitions and sales. 

Working with clients such as Locavore, they also produce commissions, collaborate on ideas and produce the works. In the Concept Shop at Locavore NXT there is a display of several artwork commission specially made for the project, including many botanical mono-prints, some natural pigment from plants, and other artworks inspired by the project. 

Their studio is in Ubud and they host many workshops and other activities onsite.

The other half of Gaya is their Art Center run by the wonderfully talented Hilary Kane. 

Established as a dedicated studio to develop the art of ceramic and explore traditional techniques with their incredible facilities, featuring several kilns and tools not found anywhere else in Indonesia. The centre runs workshops, offers an artist residency programme, and houses a space dedicated to pushing the limits in ceramic creativity. 

Not typically working outside of artistic pursuits, we were lucky to inspire Hilary to create some unique pieces that will feature as part of our dining experience at NXT. Truly one-of-a-kind craftsmanship.

Little Spoon Farm started with a mission to improve the local food system on the island of Bali, by reconciling the connection between farmers, nature and consumers. 

We have worked closely with founder Audria to create a regenerative farming system on our rooftop Food Forest  – a method of growing and harvesting fresh fruit and vegetables that gives back to the earth as much as it takes. It is the only sustainable way of farming that secures the future of our soil and indeed the future of food.

In seeking our architect partner for NXT part of the brief was innovation in how the space is an integral part of the restaurant project experience. BPA was awarded the work and have partnered with us to create a refreshing and creative modular space that reflects our aspiration to be closer to nature and regenerate more inspirational ideas for others to follow. 

Budi Pradono and his team are based in Jakarta and their portfolio features high profile government projects and private dwellings, and they have several initiatives such as Bintaro Design Week and other design competitions for architecture to solve environmental and social challenges.

Working with Agency X, we curated several of our favourite local contemporary and traditional artists from Bali to produce works for NXT. Nyoman Arisana's 3 metre wide circular painting titled 'Circle Of Life' depicts the habitat of NXT in a traditional style reminiscent of ancient Balinese paintings. Wayan Upadana's study of classical Dutch Delftware flips the ceramics on their head when exploded into a chandelier. Local wood carving experts Komang and Wayan expertly carved out of proportion Jackfruits stack in the lobby bar, hidden wooden columns reveal the calamity of village arak consumption, and the iconic Balinese door holds many secrets…

Wayan Upadana's sculptural artistry is no stranger to innovation, in our study of Delftware ceramics we decided to work with resin to create lifelike objects to allow us to produce the two sets of the work. His studio is in Gianyar, Bali, and his works have been shown internationally at many high-profile solo and group exhibitions.

Nyoman Arisana's visionary painting aesthetic defies history and time, often appearing to be ancient artefacts using his creative ageing techniques and his magical spiritual expression. His studio is in Gianyar, Bali, and his paintings are shown in galleries and exhibitions all over.

Our friends Komang and Wayan from our local wood carving village community, work with their various teams and specialists in carving, door production and temple cravings. Carving the details on these large-scale installations took over a year to produce.

LOCAL ARTISTS

Junglo are a team of certified forest makers who have helped us rewild areas of our NXT landscape. They use the Miyawaki Method created by Japanese botanist Dr. Akira Miyawaki, which focuses on understanding the original ecosystem that existed in an area and trying to recover it. 

Working with Junglo we have planted forest around our Eco Cottages with an approach that centres around biodiversity, fungi-rich soils and high plant density to help return the native nature around NXT and create a better habitat.

Kevala Ceramics are long time collaborators with the Locavore Group on many of our projects and a trusted partner for creative servingware commissions. 

We were excited to brief owner Wendy Thomas and her team on NXT and the theme of nature and sustainability. Working together with British designer Sarah Howard we commissioned a production of custom stoneware ceramics made by hand, with a particular focus on using recycled and upcycled waste. 

Glazes that use crushed glass from Sungai Watch river trash collections in Bali, old plaster moulds used to make new collection pieces, and ceramics mixed with natural stone waste from construction sites are all methods that feature in the pieces they have made for our diningware at NXT for use in the Canteen restaurant.

Aaron is the founder of Kulture, a mushroom cultivation programme and specialist mushroom product company with a focus on using fungi for health, nutrition and sustainable food. 

We have been working closely with him as our onsite Mushroom Man at NXT to explore the exciting, lesser-known local fungi that we can cultivate together and use in our cooking or sell in our Concept Shop.

Digital Nativ and their team craft ideas from commonplace components. Their visionary approach to solving problems is part ingenuity and part artwork. 

We have worked with them on several NXT installations and digital elements. They are partners in designing our B.I.O. Library – an open-source database of edible biodiversity with 3D scans  – and our Stream Of Consciousness installation.

Gaya group has two distinct halves. Gaya Ceramic Design Studio is run by husband-and-wife team Marcello and Michela, who create bespoke ceramic collections with incredible craftsmanship. 

We have a long running relationship with the people at Gaya and set them a new challenge with our brief for NXT to explore themes around nature and the space we have created. We have worked with them on many of the pieces that feature as part of our dining experience at NXT, and some are for sale in the Concept shop. 

We are forever simply mesmerised when they present their works by the creativity of ceramic finishes, designs and overall quality. It is literally eating from works of art.

Our favourite coffee gurus in Indonesia are the team at Hungry Bird Coffee. Their Canggu basecamp is a house conversion where they have their own lab and roastery to experiment with specialty local coffee beans from Indonesia and abroad. 

Headed by founder Edo who is a self confessed coffee geek, they have an interest in many farms and work with Arca, a coffee farmer from Kintamani, on special lots and processing. Not just great coffee roasters, but their brew craft and espresso know-how is up there with the best, and they pretty much win all the national competitions and have been on winners podiums in International coffee competitions and forums. 

They help work with our beverage team on coffee programmes, innovations and service.

Sub Zero Wolf are leaders in meticulously crafted and expertly engineered kitchen appliances. We have worked with them for several years on the kitchens for our Locavore LAB. For LabX – our new research and development kitchen at NXT – we were supported by Sub Zero Wolf to develop the open-kitchen facility and take our innovation to the next level. 

We also partner with them on 'Journey Of Flavours', our short film series documenting the LAB X project.

Our vision is to present a rich, deeply passionate showcase of traditional Indonesian cuisine in a contemporary experience that reflects the developing and creative nature of Indonesian culture.

Nusantara means archipelago in bahasa Indonesia and with an estimated over 17,000 islands, 1,300 tribes, 300 local languages, 3,000 cuisines, its diversity is what makes the country.

Our Nusantara is an ethno-culinary portrait of the country. Yet we represent more than just the food itself – also the local ingredients, cooking techniques, serving style and rituals that all make up the heritage and culinary culture.

Our menus cover certain regions of Indonesia, where some of the strongest recipes and culinary inspirations originate. Many of our dishes are lesser-known, very local, and often not commonly found outside of those regions. Key to this is our ongoing research in discovering lost recipes, techniques, and dishes that have been forgotten or no longer practiced. Our team is bringing these back to life.

As the sister restaurant to Locavore NXT, Nusantara benefits from the same supply chains of very high-quality ingredients, organic and heritage produce, support for local farmers, and of course, only Indonesian ingredients.

Above our restaurant is a private dining space that was once Locavore’s food laboratory and test kitchen. This space is now available to book for dinner for parties of 8-12 people, where you can enjoy the Nusantara set menu as an intimate dining experience in a room rich with culinary history.

Herbivore is a vegetation takeover of Locavore’s original restaurant venue in downtown Ubud.

Local plants run rampant across seasonal tasting menus to provide a wildly different “all flora, no fauna” experience of our local-ingredients-only philosophy.

Guests can choose from a three and five-course for lunch only or seven-course tasting menu created by chef Arnaud, with a rice-based alcoholic beverage pairings or a seriously crafted non-alcoholic pairing.

Peggy’s Brass Knuckles is our restaurant done proper in Jakarta.

Real chefs, real produce, and really sharp knives. Peggy’s is our idea of a proper restaurant, where we make dishes that we love cooking and want to eat ourselves, with decent drinks too.

Peggy’s is also more than just a proper restaurant. We have an onsite butcher’s shop and bakery, with a retail space that sells some of the ingredients we make ourselves. Plus a cafe that makes a good cup of coffee, and a bar with our favourite locally brewed craft beers on tap.

As with all restaurants by Locavore, all our ingredients are only sourced locally except for our extended beverage list, which features a curated mix of imported wines and spirits. It’s important for us to stick to only using food that can be found around us, even if that means going the extra mile in the kitchen. Better in here than out there.

Peggy's Grocery is where we get to share all the tasty things we discovered or created, and you get to take them home and enjoy some proper good food in your own kitchen.

We live next door to the restaurant with an onsite butchers, bakery and retail space for all the ingredients that we make ourselves, along with some tasty things our friends make too. Plus a café that makes a good cup of coffee, and a bar with our favourite locally brewed craft beers on tap.

LabX is our creative playground at Locavore NXT. It's our dedicated food laboratory and testing kitchen for culinary research and development... the space for all our new culinary innovations to begin. 

Our R&D team is constantly experimenting with local ingredients to discover new tastes, techniques and, ultimately, recipes that will feature on the tasting menu and beverage menu at NXT. Some of the breakthroughs in LabX might also make it into our range of food products sold in the Design Store.

When Locavore chefs Eelke and Ray want a break from the culinary high-craft of their tasting menu, they sit down and enjoy a damn-fine sandwich, burger, or coffee from their ‘cafe’ Locavore To Go.

The cafe is a casual off-shoot of their ideas and passions. Using many of their own produce from their adjacent butcher shop, Local Parts, the menu highlights span from the famous Burger à la Ray to classic sandwiches, charcuterie platters, and daily changing comfort food.

Ever wanted to pick an item to be cooked from the butcher shop but not have to cook it yourself? Just point at the butcher showcase chiller, take a seat, and we will cook it for you.

Coffee and drinks are also up to scratch with beans from local roastery Hungry Bird and teas from Chontea.

When chefs demand to go meet the farms, make relationships, and ensure the product is ethical and very high quality, you result in a great network of farmers and craft food suppliers. Whilst the team supports a balanced approach to eating meat, they do want the best from the meats that they use. It made total sense to help others have that opportunity too, so they opened their own Butcher Shop using only ethical, locally raised, and high-quality meats.

Local Parts is also a specialist in charcuterie and has perfected its own interpretation of classics using local meats – along with a large range of pickles, sauces, rubs, and other packaged goods for you to boost your own home cooking experiences.

Here you'll also find the ‘best of’ local partners such as Braud sourdough, 8 Degrees Cheese, and local salts.
