Guided by our forager, you’ll explore, learn and taste the local ingredients as sourced in Bali's jungles and farmlands. We will help you plan the schedule around your reservation at NXT.

The day begins at 8:30 AM with a light breakfast and coffee at NXT, before heading out into the jungle. The journey then ends with lunch in nature featuring some traditional Balinese food, cooked using a wide range of wild ingredients from around the landscape.

This 3 - 3,5 hour experience will help you understand the landscape behind The Source tasting menu and further deepen your overall dining experience.

Foraging Experience

This season, we go back to where it all begins. Wilder ingredients, we work less with middlemen, pull on our boots and forage further, use farms to grow the harvests we can’t yet find, let go of ingredients that have become too familiar, lean harder into our rooftop food forest, neighbouring rice paddies and the jungles around us.

Featuring ingredients you think you know, alongside others that we find wilder, delightfully unusual and unique. From sacha inchi and coconut flower, to three kinds of sapodillas, slipper lobster and Surinam cherry, all found close to home.

You will also have the option to go foraging with our team, either around NXT or deeper into the jungle, before your dining experience.

The Source

The third edition of our annual mega-collaborative adventure is back. Every year, we pitch our tents and invite creative chefs from around the world to join our annual basecamp event, Into The Wild.

This year is wilder than ever with our friends travelling from Japan, South Korea, India, Singapore, Malaysia, Philippines, Thailand, Taiwan, as well as Indonesia. Here are the participants:

Over several days, a troop of creative chefs go ‘Into the Wild’ and spend time trekking through jungles, foraging, cooking their own lunch in the jungle, sharing stories, ideas and knowledge over drinks at the campfire.

The weekend culminates in our infamous mystery-ingredient-challenge dinner service with mystery ingredients for the chef teams to cook with and serve to guests in less than 8 hours.

Over three days, a local community of 10 chefs from Bali, Jakarta and Bandung come together for NXTpedition. As part of the Ubud Food Festival, we're hosting a special ‘Field Trip’ at Locavore NXT. A behind-the-scenes walk through our space, followed by two hands-on workshops exploring our Fermentation process and Mushroom cultivation. Nature's Compass

10 chefs from Asia's leading creative restaurants are gathering in Bali to explore local ingredients and its unlimited possibilities. For four days, they will go on an adventure to do foraging and sharing cooking techniques and inspirations. On the final day, at Locavore NXT they will come up with an unpredictable, one-night-only dinner. A mysterious Black Box will be unveiled by the chefs, filled with local ingredients – some exciting, some a bit unexpected. By lottery, these experienced chefs will pair up into duos and each duo will create their own snack and main course, using the ingredients from the box.

It’s a night of creative culinary surprises – even for the chefs.

Into the Wild

A six-day retreat of mushroom cultivation in a sustainable and eco-friendly form, hosted by Kulture Mushrooms. The course covers growing and cloning mushrooms, working with agar as a means of cultivation, setting up your own fruiting chambers, with bonus sessions — myco-fabrication, medicinal mushrooms, business mastermind, fine dining at NXT, and foraging experience.

The group of tastemakers will spend several days together exploring local ingredients, sharing culinary techniques, stepping into the wild for foraging trips and connecting over their common passion for doing things differently.

But, on the final day, they're going head to head in a clash of competitive innovation with a 'mystery box of ingredients' challenge.

We're opening on Sunday 12 May for a one-off dinner featuring off-the-cuff creations from the chefs, who will have only the morning to develop and prepare new dishes for a very unique tasting menu experience.

Our onsite cabin accommodation – The Wood Rooms – is now available to book as part of 'The Full NXT Experience'.

Guests who book The Full NXT Experience are provided with dinner at Locavore NXT followed by an overnight stay at The Wood Rooms, a private tour of the NXT project (including meeting the chefs) and an off-menu breakfast in our Canteen restaurant.

The Wood Rooms are located next to the restaurant and are integrated into the project's vision for sustainability, enclosed in a small wild, wooded area we created with a reforestry foundation.

Our vision is to present a rich, deeply passionate showcase of traditional Indonesian cuisine in a contemporary experience that reflects the developing and creative nature of Indonesian culture.

Nusantara means archipelago in bahasa Indonesia and with an estimated over 17,000 islands, 1,300 tribes, 300 local languages, 3,000 cuisines, its diversity is what makes the country.

Our Nusantara is an ethno-culinary portrait of the country. Yet we represent more than just the food itself – also the local ingredients, cooking techniques, serving style and rituals that all make up the heritage and culinary culture.

Our menus cover certain regions of Indonesia, where some of the strongest recipes and culinary inspirations originate. Many of our dishes are lesser-known, very local, and often not commonly found outside of those regions. Key to this is our ongoing research in discovering lost recipes, techniques, and dishes that have been forgotten or no longer practiced. Our team is bringing these back to life.

As the sister restaurant to Locavore NXT, Nusantara benefits from the same supply chains of very high-quality ingredients, organic and heritage produce, support for local farmers, and of course, only Indonesian ingredients.

Above our restaurant is a private dining space that was once Locavore’s food laboratory and test kitchen. This space is now available to book for dinner for parties of 8-12 people, where you can enjoy the Nusantara set menu as an intimate dining experience in a room rich with culinary history.

Herbivore is a vegetation takeover of Locavore’s original restaurant venue in downtown Ubud.

Local plants run rampant across seasonal tasting menus to provide a wildly different “all flora, no fauna” experience of our local-ingredients-only philosophy.

Guests can choose from a three and five-course for lunch only or seven-course tasting menu created by chef Arnaud, with a rice-based alcoholic beverage pairings or a seriously crafted non-alcoholic pairing.

LabX is our creative playground at Locavore NXT. It's our dedicated food laboratory and testing kitchen for culinary research and development... the space for all our new culinary innovations to begin. 

Our R&D team is constantly experimenting with local ingredients to discover new tastes, techniques and, ultimately, recipes that will feature on the tasting menu and beverage menu at NXT. Some of the breakthroughs in LabX might also make it into our range of food products sold in the Design Store.

When Locavore chefs Eelke and Ray want a break from the culinary high-craft of their tasting menu, they sit down and enjoy a damn-fine sandwich, burger, or coffee from their ‘cafe’ Locavore To Go.

The cafe is a casual off-shoot of their ideas and passions. Using many of their own produce from their adjacent butcher shop, Local Parts, the menu highlights span from the famous Burger à la Ray to classic sandwiches, charcuterie platters, and daily changing comfort food.

Ever wanted to pick an item to be cooked from the butcher shop but not have to cook it yourself? Just point at the butcher showcase chiller, take a seat, and we will cook it for you.

Coffee and drinks are also up to scratch with beans from local roastery Hungry Bird and teas from Chontea.

When chefs demand to go meet the farms, make relationships, and ensure the product is ethical and very high quality, you result in a great network of farmers and craft food suppliers. Whilst the team supports a balanced approach to eating meat, they do want the best from the meats that they use. It made total sense to help others have that opportunity too, so they opened their own Butcher Shop using only ethical, locally raised, and high-quality meats.

Local Parts is also a specialist in charcuterie and has perfected its own interpretation of classics using local meats – along with a large range of pickles, sauces, rubs, and other packaged goods for you to boost your own home cooking experiences.
